Summer Gazpacho

Ingredients:
- 2 pounds ripe Roma tomatoes, coarsely chopped (any other type of tomatoes works as well)
- 1 small cucumber (1/2 pound), peeled and chopped
- 1 medium green bell pepper, seeded and chopped
- 1 small red onion, peeled and chopped
- 3 small garlic cloves (or 1 large clove), peeled and minced
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon sea salt
- 1 teaspoon freshly cracked pink pepper
- 1 teaspoon ground cumin
***Optional Garnishes: Chopped fresh herbs (such as basil, dill, etc.), a drizzle of olive oil, or any leftover chopped gazpacho ingredients
Instructions:
- Purée. Combine all ingredients in a blender or food processor. Blend for 1 minute, or until the soup reaches a smooth, desired consistency.
- Season. Taste and season with extra salt, pepper, and/or cumin if needed.
- Chill. Store in an airtight container in the refrigerator for 3 to 4 hours, or until the soup is completely chilled.
- Serve. Serve cold, topped with your choice of garnishes.
